Leek Patties

Petite pan-fried fritters, often known as keftedes, are a beloved signature dish in Sephardic cuisine. These wonderful leek fritters offer a tasty blend of savory ground beef with the subtle, mildly sweet essence of fresh leeks, rendering them utterly irresistible.

Yields 12

  • 4 leeks
  • 250g minced beef
  • 2 large eggs
  • 1 tbsp dry breadcrumbs
  • 1 tbsp dill, diced
  • 1 tbsp flat-leaf parsley, finely chopped
  • ½ tsp sweet paprika
  • Olive oil, for pan-frying
  • Lemon wedges, to serve

Thoroughly wash the fresh leeks properly and remove the base and most of the dark green parts. Cut in half longways then into 1.5-centimeter pieces. Place in a deep pan and submerge with cold water, then simmer over a medium heat for about 20 minutes or until cooked through.

Remove the water from the cooked leeks and transfer in a large mixing bowl with the beef, eggs, breadcrumbs, chopped dill, parsley and paprika and flavor well with salt and pepper. Mix completely using your palms then mold a several scoops into a ball, flattening a little. Put on a plate and continue for the balance of the preparation.

Heat oil in a skillet to a amount of about ¾ inch over a medium heat. When the olive oil is sizzling, brown the patties in small batches until golden on both sides. (Avoid overcrowding the skillet as this lowers the oil temperature of the cooking oil.) Transfer the ready fritters to a plate topped with absorbent paper and permit to drain.

Serve with lemon wedges.

Keftes de Espinacha

These delightful cheesy spinach fritters are a genuine treat. The crispy crust opens up to a smooth center. The leafy spinach imparts a bright, slightly natural note, while the dairy offers a savory, savory richness. You can substitute the cheese with boiled, mashed potatoes if you like.

  • 1kg fresh spinach (alternatively about 500g frozen spinach, thawed overnight in the cooler)
  • 3 tbsp extra virgin oil
  • 1 large onion, finely diced
  • 2 cloves of garlic, finely chopped
  • 100g kefalotyri, shredded
  • 80g creamy ricotta
  • ½ tsp grated nutmeg
  • ½ tsp sweet paprika
  • 120g breadcrumbs (1 and ¼ cups), with more if needed
  • 3 large eggs
  • Olive oil for pan-frying (or neutral oil)
  • Lemon wedges, to accompany

For leafy greens, clean it well, getting rid of any tough stems, and cut into it into big pieces. Put in a deep pan with a little liquid over a medium heat. Once softened, strain in a sieve for about a quarter hour, then remove any extra water and reserve.

When working with thawed frozen spinach, thoroughly remove excess liquid.

Preheat the olive oil in a frying pan over a moderate heat and fry the diced onion and garlic until softened, about a few minutes. Remove from the stove.

Put the prepared spinach, cooked onion and sauteed garlic, grated cheese, creamy cheese, nutmeg, paprika, dry crumbs and beaten eggs in a large bowl and season with salt and pepper. Combine well until incorporated. If the mixture looks too soft, incorporate some extra breadcrumbs.

With your fingers, form the mixture into elongated patties slightly larger than a nut but less bulky than an chicken egg, and set them on a baking sheet lined with wax paper. Cover and refrigerate for at least one hour.

In a big skillet over medium flame, heat olive oil to a depth of about 1 centimeter. Cook the patties a handful for two to three minutes per side, turning so they are crispy everywhere, then transfer on paper towel.

Present with lemon wedges.

  • 45g dry lentils (0.25 cup)
  • 90g burghul (½ cup)
  • 125ml olive oil (0.5 cup)

  • 1 egg
  • Salt and pepper, to liking
  • Creamy yogurt and lemon slices, to garnish

Put the brown lentils in a pan and cover with plenty of water. Simmer over a moderate heat for about 20 mins or until partially softened, including additional water to keep the pulses covered if required.

Add the cracked wheat and continue cooking until tender. Drain the ingredients completely and reserve in a mixing bowl.
